Mango chia pudding

It’s mango season and if you want to make the most of it while also putting a spring in your step each morning with a healthy breakfast, then you need to try this Mango Chia Pudding.

Serves 2
DF, GF, Vegan, Refined sugar-free


1 large mango, peeled and chopped
1 cup coconut milk
1 tablespoon organic maple syrup
1 teaspoon ground turmeric
5 tablespoon chia seeds
1/2 cup coconut yoghurt
1/2 mango, cubed to serve
1/2 cup macadamia nuts, to serve
1/4 cup coconut flakes, to serve

1. Mix mango, coconut milk, maple syrup, turmeric, and chia seeds in a high-speed blender. If you are using frozen mango, let it defrost first.
2. Pour mixture into a large airtight container and refrigerate overnight.
3. Serve with coconut yoghurt, fresh mango, macadamia nuts and coconut lakes.
