Green pea fritters with spiced eggs.
 
Ingredients includes:
2 cups of frozen peas, 2 eggs, 80g crumbed fetta, 3tbs buckwheat flour, 2 tbs water, 1 tbs mint, 1 tbs coriander, 2 shallots, 1 small chilli, 1 tsp cumin, 1 tsp bicarb soda, juice ½ lemon, cracked pepper, lemon wedges to serve.
 
Dressing:
4tbs greek yoghurt, 1 tbs lemon juice, 2 tbs tahini, pinch of salt, 8 soft boiled eggs, 1 tbs sumac to serve.
 
Instructions:
Place the defrosted peas in a mixing bowl and blitz until the mixture is pureed and the other half is chunky. Add all remaining ingredients and stir to combine. Add batter to the hot pan with oil and heap one tablespoon at a time. Let cook for 2 minutes then turn for 1 minute.
 
For dressing combine ingredients – dollop over the fritters to serve with soft boiled eggs rolled in the sumac and wedge of lemon.
